Instructions

  2. Cook ground beef over medium-high heat until browned; drain excess fat.
  3. In a large pot, melt butter, sauté onions until softened, then add garlic.
  4. Stir in flour to create a roux; gradually mix in chicken broth while scraping the pot bottom.
  5. Add seasonings and half-and-half; bring to a boil then simmer.
  6. Incorporate mashed potatoes into the broth; blend for creaminess if desired.
  7. Mix in cooked beef and frozen vegetables; heat through for about five minutes.
  8. Remove from heat; stir in shredded cheese until melted.
