  • 1 tablespoon olive oil
  • 1 teaspoon chipotle chili powder
  • 1 bag tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup black beans
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • Lime wedges for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shredded tofu with chipotle powder, smoked paprika, cumin, salt, and pepper. Cook for 5–7 minutes until crispy.
  2. Preheat your oven to 375°F (190°C).
  3. Spread tortilla chips on a baking sheet. Top with cooked tofu, cheese, black beans, corn, diced tomatoes, jalapeños, and red onion.
  4. Bake for 10–12 minutes or until cheese is melted.
