  • 1.5 lb raw shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • 1/2 cup chopped onion
  • 5 cloves garlic (minced)
  • 1.5 cups cooked corn kernels
  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)
  • Juice of 2 small limes
  • Fresh cilantro (for garnish)
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt (to taste)
  • 1 teaspoon smoked paprika

Instructions

  1. Prepare all ingredients by peeling and deveining shrimp, chopping onion, and mincing garlic.
  2. In a skillet over medium heat, melt olive oil and butter. Add onion; sauté until translucent (about 3 minutes). Stir in garlic; cook until fragrant (about 1 minute).
  3. Add shrimp, chili powder, and salt; cook until shrimp turns pink (approximately 3-4 minutes). Remove from skillet and set aside.
  4. In the same skillet, add corn and smoked paprika; pour in half-and-half. Simmer for about 5 minutes until slightly thickened.
  5. Return shrimp to the skillet, crumble in half of the feta cheese, and stir well to combine.
  6. Serve with lime juice squeezed on top and garnish with remaining feta cheese and fresh cilantro.
