Ingredients
- 2 lbs ground beef
- 1 tbsp olive oil
- 1 red bell pepper, finely chopped
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- ¾ cup Italian-style breadcrumbs
- ½ cup grated parmesan cheese
- 2 eggs
- 2 tbsp tomato paste
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped
- ¼ lb deli chicken (alternative to pork product)
- 12–15 large fresh basil leaves
- 1 ¼ cup shredded mozzarella cheese
- Marinara sauce
- Cooked pasta or zucchini noodles, if desired
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté chopped red bell pepper and onion until soft, then add minced garlic.
- In a large bowl, mix ground beef with breadcrumbs, parmesan cheese, eggs, tomato paste, salt, pepper, parsley, and the sautéed vegetables.
- Shape the mixture into a rectangle on parchment paper. Layer with chicken slices, basil leaves, and mozzarella.
- Roll the mixture tightly using the parchment paper as a guide, sealing the edges.
- Place on a baking sheet and bake for about 1 hour.
- Allow resting before slicing; serve over cooked pasta or zucchini noodles with marinara sauce.
