  • 1 green apple (any crisp apple will work)
  • 2 romaine lettuce leaves
  • 1/2 cup grapes (or sultanas)

  • 2 Tbsp dried barberries (or cranberries, pomegranate, cherries, sultanas, dates)
  • 1 Tbsp olive oil
  • 2 Tbsp lime juice (or lemon juice)
  • 1 garlic clove
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. Wash all produce under cold water. Chop celery into bite-sized pieces and dice the green apple. Tear romaine lettuce into smaller pieces.
  2. In a mixing bowl, combine chopped celery, diced apple, torn romaine lettuce, grapes, walnuts, and dried barberries. Toss gently to mix.
  3. In a small bowl or jar, whisk together olive oil, lime juice, minced garlic, black pepper, and salt until blended.
  4. Pour the dressing over the salad mixture and toss again to coat evenly.
  5. Serve immediately as a fresh side or light lunch.
