Ingredients

Scale
  • 2 pounds beef chuck roast
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup beef broth
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Trim excess fat from the beef chuck roast and season generously with salt and pepper.
  2. In a heavy-bottomed pot or Dutch oven, heat olive oil over medium-high heat; sear the beef until browned on all sides. Remove and set aside.
  3. Sauté chopped onion in the same pot until softened; add minced garlic and cook for another minute.
  4. Stir in crushed tomatoes, beef broth, apple cider vinegar, and spices; mix well.
  5. Return the seared beef to the pot, ensuring it’s submerged in the sauce. Bring to a simmer.
  6. Cover and transfer to a preheated oven at 325°F (163°C); cook for about 3 hours or until fork-tender.
  7. Let rest before slicing and serve hot over rice or your choice of sides.
