  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (plus extra for naan)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste (Madras or Indian blend)
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 beef stock cube
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a skillet over medium heat. Sauté chopped onion until translucent; add garlic and ginger and cook until fragrant.
  2. In a mixing bowl, combine curry paste, turmeric, cumin, paprika, and crumbled beef stock cube to form a smooth paste.
  3. Transfer sautéed aromatics to the slow cooker along with the spice mixture and cubed beef. Add coconut milk and tomato paste; stir well.
  4. Season with salt and pepper to taste. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  5. Stir before serving and garnish with fresh cilantro. Serve with warm garlic naan.
