  • 2 (10-ounce) cans diced tomatoes and green chilies
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 (15.5-ounce) can dark red kidney beans, drained and rinsed
  • 1 (15.5-ounce) can pinto beans, drained and rinsed
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon brown sugar
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground cayenne
  • kosher salt and black pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the ground meat until fully cooked. Add the onion halfway through cooking until soft, then stir in garlic and cook for an additional minute.
  2. Transfer the meat mixture to the slow cooker. Whisk together beef broth and tomato paste; pour over the meat.
  3. Add diced tomatoes, beans, and all spices to the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Taste before serving and adjust seasoning as needed.
