  • 2 pounds frozen diced potatoes
  • 1 can whole kernel corn
  • 1 can Rotel diced tomatoes with green chilies
  • 1 can condensed cream of mushroom soup
  • 1/2 cup beef broth
  • 1 teaspoon dried paprika
  • 1 teaspoon dried parsley flakes (optional)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (to taste)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess fat.
  2. In a slow cooker, combine browned beef, chopped onions, minced garlic, frozen potatoes, drained corn, Rotel tomatoes, cream of mushroom soup, and beef broth.
  3. Season with paprika, parsley flakes (if using), chili powder, garlic powder, black pepper, and salt.
  4. Mix thoroughly until well combined.
  5. Cover and cook on low for about 3 hours until potatoes are tender.
  6. Stir in 1 cup of shredded cheese during the last 15 minutes of cooking.
  7. Serve hot topped with remaining cheese.
