  • 1 lb ground chicken
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/3 cup finely diced red bell pepper
  • 2 tablespoons diced green onion
  • 2 teaspoons smoked paprika
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic (finely chopped or minced)
  • 1 tablespoon avocado oil
  • 4 slices cheddar cheese
  • 2 strips turkey bacon (cooked and cut in half making 4 pieces)
  • 2 buns (preferably brioche)

Instructions

  1. In a mixing bowl, combine ground chicken, egg, breadcrumbs, red bell pepper, green onion, smoked paprika, Cajun seasoning, sea salt, and black pepper. Mix until well combined.
  2. Divide the mixture into four equal portions and roll each into a ball.
  3. Heat avocado oil in a skillet over medium heat. Add the chicken balls to the skillet and smash each down to form patties.
  4. Cook for about 4-5 minutes until golden brown on one side, then flip and cook for another 3-4 minutes.
  5. Top each patty with cheddar cheese and cover the skillet until melted.
  6. Assemble the burgers by spreading mayo and sriracha on toasted buns, adding patties, sliced red onion, and turkey bacon.
