  • 4 cups mixed greens
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • ½ medium red onion
  • 4 oz feta cheese
  • ½ cup olives
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tbsp dill
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Wash all vegetables thoroughly. Chop mixed greens into bite-sized pieces.
  2. In a large mixing bowl, combine the mixed greens, sliced cucumber, halved cherry tomatoes, and thinly sliced red onion.
  3. Cut the smoked salmon into bite-sized pieces and gently fold it into the vegetable mixture.
  4. Crumble feta cheese over the top along with olives.
  5. In a small bowl, whisk together lemon juice, olive oil, dill, salt, and pepper until combined.
