- 1 tablespoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing or lining it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger; set aside.
- In a large mixing bowl, cream the softened butter with granulated and brown sugars until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Stir in pumpkin puree and vanilla extract until fully combined.
- Gradually incorporate the dry ingredients into the wet mixture until just combined—do not overmix.
- Prepare the cinnamon-sugar topping by combining granulated sugar and cinnamon in a small bowl.
- Pour half of the batter into the prepared loaf pan; sprinkle half of the cinnamon-sugar topping on top. Repeat with remaining batter and topping.
- Use a knife to swirl through the batter gently.
- Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
