  • 6 eggs
  • 1 can (12 oz) chicken
  • 2 tablespoons soy sauce
  • 2 1/2 teaspoons sugar
  • 1/4 cup water
  • 3 sheets nori (seaweed)
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon salt

Instructions

  1. Rinse the sushi rice until the water runs clear. Cook in a rice cooker or pot with 2 cups water. Once cooked, mix rice vinegar, sugar, and salt into the rice.
  2. Slice chicken into 1/4-inch pieces. In a skillet over medium-high heat, cook chicken until browned on both sides (about 4 minutes total).
  3. Combine soy sauce and water in another bowl; sprinkle sugar on chicken slices and pour sauce mixture over them. Simmer until thickened (about 4 minutes).
  4. Beat eggs in a bowl; cook in a skillet to form an omelet for each third of the egg mix. Roll omelet to match chicken width.
  5. To assemble, place about 1/2 cup of rice in musubi mold, layer with nori, egg omelet, and chicken; wrap tightly.
