- 6 eggs
- 1 can (12 oz) chicken
- 2 tablespoons soy sauce
- 2 1/2 teaspoons sugar
- 1/4 cup water
- 3 sheets nori (seaweed)
- 2 cups water
- 2 tablespoons rice vinegar
- 1/2 teaspoon salt
Instructions
- Rinse the sushi rice until the water runs clear. Cook in a rice cooker or pot with 2 cups water. Once cooked, mix rice vinegar, sugar, and salt into the rice.
- Slice chicken into 1/4-inch pieces. In a skillet over medium-high heat, cook chicken until browned on both sides (about 4 minutes total).
- Combine soy sauce and water in another bowl; sprinkle sugar on chicken slices and pour sauce mixture over them. Simmer until thickened (about 4 minutes).
- Beat eggs in a bowl; cook in a skillet to form an omelet for each third of the egg mix. Roll omelet to match chicken width.
- To assemble, place about 1/2 cup of rice in musubi mold, layer with nori, egg omelet, and chicken; wrap tightly.
