  • 3/4 cup frozen spinach, thawed
  • 1 cup marinated jarred artichokes, chopped
  • 1 cup shredded gouda or fontina cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 clove garlic, grated
  • 1/4 cup fresh basil, chopped
  • Red pepper flakes
  • 4 small pitas
  • 3 tablespoons salted butter
  • Honey, for serving

Instructions

  1. In a bowl, mix together thawed spinach, chopped artichokes, gouda (or fontina), mozzarella, garlic, fresh basil, and red pepper flakes.
  2. Cut one side of each pita open and stuff with the cheese mixture evenly.
  3. Butter the outside of each stuffed pita generously.
  4. Heat a skillet over medium heat and grill each pita for 3-4 minutes on each side until golden brown.
  5. Serve warm with optional honey drizzled on top.
