  • 1 lb beef tenderloin or beef shoulder
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups bok choy, chopped (separate white stems and green leaves)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil

Instructions

  1. Marinate sliced beef with cornstarch and soy sauce for about 10 minutes.
  2. Heat vegetable oil in a wok over medium-high heat. Add marinated beef and sear for 2-3 minutes before stir-frying until cooked through.
  3. Push beef aside and sauté minced garlic and grated ginger for 30 seconds.
  4. Add bok choy stems first; stir-fry for 2 minutes, then add leaves until wilted.
