  • 1/2 cup sour cream or yogurt

  • 1 Tbsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup diced strawberries (fresh or frozen)

Instructions

  1. Preheat your oven to 425°F and line a muffin tin with liners.
  2. In a large mixing bowl, mash the bananas and then add the sugar, sour cream (or yogurt), milk, egg, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt before sifting it into the wet mixture.
  4. Gently combine until just incorporated. Fold in the diced strawberries.
  5. Fill each muffin cup to the top with batter. Bake for 5 minutes at 425°F, then reduce to 350°F and bake an additional 10-12 minutes until golden brown.
  6. Let cool for about 5 minutes before transferring muffins to a cooling rack.
