  • 4 eggs
  • 1 1/3 cup water
  • 2/3 cup vegetable oil
  • 3 oz box of strawberry Jello
  • 1 stick unsalted butter (softened)
  • 7.5 oz vegan marshmallows fluff
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 4 tbsp heavy whipping cream

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a non-stick bundt pan with spray.
  2. In a large bowl, combine strawberry cake mix, eggs, water, vegetable oil, and strawberry Jello. Mix until well blended.
  3. Pour batter into the prepared bundt pan and bake for 35-40 minutes until a toothpick comes out clean.
  4. Let the cake cool for about 10 minutes before transferring to a cooling rack to cool completely.
  5. To prepare the filling, cream softened butter in a bowl until fluffy. Add vegan marshmallows fluff, powdered sugar, and vanilla extract; mix until combined.
  6. Gradually add heavy whipping cream until creamy consistency is achieved.
  7. Flip the cooled bundt cake top-side up and create holes in the bottom for filling using a spoon.
  8. Fill each hole with the creamy mixture using a piping bag.
