  • 4 cups strawberries
  • ½ cup water
  • ¾ cup granulated sugar
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 2 teaspoons vanilla extract
  • Ladyfingers (260g)
  • Freeze-dried strawberries (for dusting)

Instructions

  1. Prepare the strawberry syrup by cooking strawberries with water until softened, then strain to extract juice. Add sugar and lemon juice, simmer until slightly thickened.
  2. In a bowl, mix mascarpone cheese, sugar, and vanilla until smooth. In another bowl, whip cream to stiff peaks and fold into the mascarpone mixture.
  3. Combine cooled strawberry syrup with the mascarpone filling gently. Dip ladyfingers in remaining syrup briefly and layer them in your serving dish.
  4. Spread half of the mascarpone filling over ladyfingers, add another layer of dipped ladyfingers, then top with remaining filling.
  5. Chill for at least 6 hours or overnight before serving. Dust with freeze-dried strawberry powder and garnish with fresh sliced strawberries.
