  • 4 yellow plantains
  • 1 lb ground beef
  • ½ medium onion (finely diced)
  • 2 garlic cloves (minced)
  • ½ green bell pepper (diced)
  • ½ red bell pepper (diced)
  • ¼ cup tomato sauce
  • ¼ cup beef broth
  • 2 tbsp avocado oil (separated)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the ends off each plantain, score the skin, and peel it off. Coat with avocado oil and roast on the baking sheet for 30 minutes, flipping halfway.
  3. In a skillet, heat avocado oil over medium heat. Sauté onions, garlic, and bell peppers until softened.
  4. Add ground beef to the skillet, cooking until browned. Stir in tomato sauce, beef broth, salt, black pepper, adobo seasoning, and cayenne pepper; simmer for 8-10 minutes.
  5. Slice roasted plantains lengthwise without cutting through. Stuff each with the beef mixture generously.
