Ingredients
- 4 yellow plantains
- 1 lb ground beef
- ½ medium onion (finely diced)
- 2 garlic cloves (minced)
- ½ green bell pepper (diced)
- ½ red bell pepper (diced)
- ¼ cup tomato sauce
- ¼ cup beef broth
- 2 tbsp avocado oil (separated)
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the ends off each plantain, score the skin, and peel it off. Coat with avocado oil and roast on the baking sheet for 30 minutes, flipping halfway.
- In a skillet, heat avocado oil over medium heat. Sauté onions, garlic, and bell peppers until softened.
- Add ground beef to the skillet, cooking until browned. Stir in tomato sauce, beef broth, salt, black pepper, adobo seasoning, and cayenne pepper; simmer for 8-10 minutes.
- Slice roasted plantains lengthwise without cutting through. Stuff each with the beef mixture generously.
