  • 4 medium zucchini
  • 1 lb ground turkey
  • 1/2 cup onion, finely diced
  • 1 teaspoon minced garlic
  • 2 cups marinara sauce
  • 3/4 cup shredded mozzarella cheese
  • 2 teaspoons olive oil
  • 1/2 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F and coat a baking dish with cooking spray.
  2. Cut each zucchini in half lengthwise and scoop out the centers.
  3. Season the zucchini halves with Italian seasoning, salt, and pepper. Place cut-side up in the baking dish.
  4. In a skillet over medium-high heat, add olive oil and ground turkey. Cook until browned (about 5 minutes).
  5. Add onions to the skillet; sauté for about 4 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
  6. Mix in marinara sauce; simmer for 5 minutes.
  7. Fill each zucchini half with the turkey mixture and top with shredded mozzarella.
  8. Bake for approximately 25 minutes until zucchini is tender and cheese is melted.
