  • 2 tbsp unsalted butter (melted)
  • 0.5 cup all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 cup unsalted butter (cold and cut into small pieces)
  • 0.25 cup granulated sugar (for extra sweetness, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together softened butter and sugars until light and fluffy; add the egg and vanilla, mixing well.
  3. Gradually incorporate flour and baking powder; press half the dough into the bottom of the pan.
  4. Whisk lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth; pour over the cookie crust.
  5. For the crumble topping, mix flour, granulated sugar, and cold butter until crumbly; sprinkle on top of the filling.
  6. Bake for 40-45 minutes until golden brown; let cool completely before slicing.
