  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter (room temperature)
  • 1 cup sugar
  • 1 egg
  • 1/2 cup buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon sparkling sugar (for topping)

Instructions

  1. Preheat your oven to 350°F, and generously butter a 9" deep-dish pie plate.
  2. Peel and slice the peaches into eight equal slices, then lay them on a paper towel to absorb moisture.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, beat room temperature butter until creamy. Add sugar and mix until fluffy. Gradually blend in the egg, buttermilk, and vanilla extract.
  5. Slowly incorporate the flour mixture until just combined. Scrape the batter into the prepared pie plate.
  6. Arrange peach slices on top of the batter and sprinkle with sparkling sugar.
  7. Bake for 10 minutes at 350°F, then lower the temperature to 325°F and continue baking for another 50-60 minutes until a toothpick comes out clean.
