  • 6 tablespoons cornstarch
  • 50 ml vegetable oil for frying

  • 1 onion (thinly sliced)
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger (grated)
  • 2 cloves garlic (grated)
  • 432 g canned pineapple pieces (drained; reserve the juice)

Instructions

  1. Season diced chicken with salt and pepper, then coat with cornstarch.
  2. Heat vegetable oil in a frying pan over medium-high heat; fry chicken until golden brown. Remove from pan.
  3. Sauté onion and bell peppers in the same pan for about 5 minutes until tender yet crisp.
  4. In a bowl, mix ketchup, cider vinegar, brown sugar, soy sauce, ginger, garlic, and reserved pineapple juice until smooth.
  5. Return chicken to the pan along with sautéed vegetables; pour sauce over everything.
  6. Add drained pineapple pieces; cook for an additional 5-7 minutes until heated through and serve.
