Ingredients
- 2 large sweet potatoes (about 1.5 lbs), peeled and thinly sliced
- 4 cups kale, stems removed and chopped
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup Gruyère cheese, grated
- 1/4 teaspoon ground nutmeg
- Salt and black pepper to taste
- 1 tablespoon olive oil (for greasing)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and thinly slice the sweet potatoes.
- In a skillet over medium heat, sauté chopped kale in a splash of water or olive oil for about 5–7 minutes until wilted.
- Grease a baking dish with olive oil.
- Layer the sweet potato slices at the bottom, followed by half of the sautéed kale, some heavy cream, and grated Gruyère cheese. Repeat layers until all ingredients are used.

- Remove the foil and bake for an additional 20–25 minutes until golden brown on top.
