Ingredients
- 1 lb beef ribs (chopped into 1-inch chunks)
- 1 lb daikon (chopped into chunks)
- 1 inch ginger (thinly sliced)
- 5 cloves garlic (peeled)
- Water
- 2 tsp salt (more to taste)
- 1 tsp white pepper (more to taste)
- Fresh cilantro or scallions (for garnish)
Instructions
- In a large pot, place the beef ribs and cover with cold water. Bring to a boil over high heat and blanch for 3-4 minutes. Drain and set aside.
- Return the blanched beef ribs to the pot along with daikon, ginger, and garlic. Add about 2 liters of water until all ingredients are submerged. Bring back to a boil and then reduce to simmer.
- Cover with a lid and simmer for 45 minutes to an hour until the beef is tender.
- Season with salt and white pepper to taste.
- Garnish each bowl with fresh cilantro or scallions before serving hot.
