  • 1 lb beef ribs (chopped into 1-inch chunks)
  • 1 lb daikon (chopped into chunks)
  • 1 inch ginger (thinly sliced)
  • 5 cloves garlic (peeled)
  • Water
  • 2 tsp salt (more to taste)
  • 1 tsp white pepper (more to taste)
  • Fresh cilantro or scallions (for garnish)

Instructions

  1. In a large pot, place the beef ribs and cover with cold water. Bring to a boil over high heat and blanch for 3-4 minutes. Drain and set aside.
  2. Return the blanched beef ribs to the pot along with daikon, ginger, and garlic. Add about 2 liters of water until all ingredients are submerged. Bring back to a boil and then reduce to simmer.
  3. Cover with a lid and simmer for 45 minutes to an hour until the beef is tender.
  4. Season with salt and white pepper to taste.
  5. Garnish each bowl with fresh cilantro or scallions before serving hot.
