Ingredients
- 200 g all-purpose flour
- 140 g almond flour
- 75 g sugar
- 150 g margarine
- 500 mL soy milk
- 30 g cornstarch
- 75 g brown sugar
- 3 g agar-agar
- Fresh pineapple sage (or verbena)
- 1 tsp vanilla extract
- 250 g strawberries
Instructions
- Preheat the oven to 180°C (350°F). In a food processor, blend flour, almond flour, sugar, and margarine until crumbly. Press into the tart pan and bake for 20 minutes until golden brown. Let cool.
- For the pastry cream, heat soy milk in a saucepan. Whisk together cornstarch, brown sugar, and agar-agar in a bowl. Gradually add warm soy milk while whisking until smooth. Return to heat and cook until thickened. Stir in fresh pineapple sage and vanilla; let cool.
- Once the crust is cooled, pour the pastry cream inside and top with sliced strawberries. Chill for at least two hours before serving.
