  • 200 g all-purpose flour
  • 140 g almond flour
  • 75 g sugar
  • 150 g margarine
  • 500 mL soy milk
  • 30 g cornstarch
  • 75 g brown sugar
  • 3 g agar-agar
  • Fresh pineapple sage (or verbena)
  • 1 tsp vanilla extract
  • 250 g strawberries

Instructions

  1. Preheat the oven to 180°C (350°F). In a food processor, blend flour, almond flour, sugar, and margarine until crumbly. Press into the tart pan and bake for 20 minutes until golden brown. Let cool.
  2. For the pastry cream, heat soy milk in a saucepan. Whisk together cornstarch, brown sugar, and agar-agar in a bowl. Gradually add warm soy milk while whisking until smooth. Return to heat and cook until thickened. Stir in fresh pineapple sage and vanilla; let cool.
  3. Once the crust is cooled, pour the pastry cream inside and top with sliced strawberries. Chill for at least two hours before serving.
