- 3 lbs goat meat
- 4–5 tbsp curry powder
- ½ cup green seasoning
- ½ Scotch bonnet pepper
- 2 medium potatoes (cubed)
- Fresh thyme
- Ginger
- ½ cup water (as needed)
- 2 tbsp adobo
- 3 tbsp complete seasoning
- 3 tbsp black pepper
- 1 tbsp jerk seasoning
- 2 tbsp onion powder
- 1 tsp cayenne pepper
- 1 tsp oregano
- 6 pimento seeds
- 3 cloves garlic
- ¼ cup onion
- ¼ cup sweet pepper
Instructions
- Wash the goat meat in a mix of vinegar, lime, and water for about 15 minutes, then rinse.
- Combine all dry seasonings in a bowl and rub them into the goat meat. Refrigerate overnight.
- Remove the meat from the fridge and let it come to room temperature for 10–15 minutes.
- In a large pot, sauté crushed garlic cloves in water, then add curry powder and pimento seeds until fragrant.
- Brown the marinated goat meat on all sides in the pot before adding water along with chopped onions, sweet peppers, thyme stems, ginger, and Scotch bonnet pepper.
- Cover and simmer gently for 2–3 hours until tender. Add cubed potatoes during the last cooking phase.
- Adjust seasoning as needed before serving hot with your choice of sides.
