  • 2 tbsp sugar (for syrup)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together flour, instant coffee granules, cocoa powder, and a pinch of salt; set aside.
  3. In another bowl, cream unsalted butter and granulated sugar until fluffy. Add egg and vanilla extract; mix well.
  4. Gradually incorporate dry ingredients into the wet mixture until just combined.
  5. Scoop dough onto prepared baking sheets, spacing them two inches apart.
  6. Bake for 10-12 minutes until edges are golden but centers remain soft. Allow to cool completely on racks.
  7. For the syrup: Heat strong brewed coffee with sugar in a saucepan until dissolved; cool slightly.
  8. Assemble cookies by spreading mascarpone on one half, drizzling with syrup, and topping with another cookie half.
