Ingredients
- 500g chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 onion, diced

- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 400g canned chopped tomatoes
- 200ml chicken stock
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
- 2 cups cooked white rice
Instructions
- Heat olive oil in a large pan over medium heat. Add diced onion and minced garlic; sauté until soft (3-5 minutes).
- Add chicken pieces; season with salt, pepper, smoked paprika, and oregano. Brown lightly on all sides (5-7 minutes).
- Stir in diced red and green bell peppers; cook for an additional 3 minutes.
- Pour in canned chopped tomatoes and chicken stock; stir well.
- Simmer uncovered for 15-20 minutes until the sauce thickens and chicken is cooked through.
