  • 1 + ½ teaspoon ground cinnamon

  • ¼ teaspoon vanillin powder or ½ teaspoon vanilla extract
  • 1 orange zested
  • ½ teaspoon baking soda
  • 125 grams fine semolina
  • 550 grams all-purpose flour
  • 1 teaspoon baking powder
  • 400 grams sugar (for syrup)
  • 100 grams honey (for syrup)
  • 325 ml water (for syrup)
  • 1 stick of cinnamon (for syrup)
  • 45 dried cloves (for syrup)
  • 1 orange peel (for syrup)
  • honey (for topping)
  • ground walnuts (for topping)

Instructions

  1. Prepare the syrup by combining sugar, honey, water, cinnamon stick, cloves, and orange peel in a saucepan. Bring to a boil until sugar dissolves, then simmer for 10 minutes. Set aside to cool.
  2. In a large bowl, whisk olive oil and sugar together until well combined. Add orange juice, honey, water, spices, baking soda, semolina, flour, and baking powder. Mix until a soft dough forms.
  3. Preheat your oven to 180°C (350°F). Shape small portions of dough into oval or round balls and place them on lined baking sheets.
  4. Bake for about 20 minutes until lightly golden brown; let cool slightly before dipping each cookie in the cooled syrup for 30 seconds.
  5. Place soaked cookies on a cooling rack and sprinkle with chopped walnuts before serving.
