Description

  • 1.5 lbs Beef Tenderloin
  • ¼ cup Soy Sauce
  • ¼ cup Brown Sugar
  • ½ cup Pineapple Juice
  • 2 tbsp Sesame Oil
  • 1 tsp Garlic Powder
  • ¼ tsp Onion Powder
  • 1 Medium Zucchini
  • 1 Red Bell Pepper
  • 1 Red Onion
  • 1 Can Pineapple Rings

Instructions

  1. Pat dry the Beef tenderloin and trim excess fat. Cut into 1-inch cubes.
  2. In a casserole dish, combine soy sauce, brown sugar, pineapple juice, sesame oil, garlic powder, and onion powder. Add Beef and toss to coat. Cover and refrigerate for at least 5 hours or up to 24 hours.
  3. Soak wooden skewers in water for one hour if using.
  4. Prepare vegetables by cutting the zucchini into rounds, bell pepper into chunks, and onion into quarters.
  5. Assemble skewers by alternating Beef cubes with vegetables and pineapple pieces.
  6. Preheat Traeger Grill to 200°F and place skewers on grates for about 15 minutes to smoke.
  7. Increase grill temperature to 400°F and brush kabobs with reserved marinade sauce. Cook for an additional 12-15 minutes until Beef reaches an internal temperature of 150°F.
