  • 6 slices thick-cut turkey bacon, chopped
  • 1/2 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 4 cups cooked and cooled long-grain rice (preferably day-old)
  • 3 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions

  1. In a large skillet over medium heat, cook the chopped turkey bacon until crispy. Remove and set aside on paper towels.
  2. In the same skillet, sauté the diced onion until translucent (3-5 minutes).
  3. Add minced garlic along with frozen peas and carrots; cook for another 2-3 minutes until tender.
  4. Stir in cold rice and cook for an additional 2-4 minutes while mixing well.
  5. Push rice mixture to one side and scramble the beaten eggs on the other side until fully cooked, then mix everything together.
  6. Increase heat to high, add soy sauce, oyster sauce, sesame oil, and crispy turkey bacon; stir well to combine.
  7. Season with salt and pepper to taste and cook for another 1-2 minutes before serving hot.
