  • 1 can artichoke hearts, drained and chopped
  • 1 medium red onion, thinly sliced
  • 1 cup black olives, pitted and halved
  • 1 cup fresh basil leaves, torn
  • 3 cups mixed salad greens (optional)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar or lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare all ingredients: Wash and chop the tomatoes, artichokes, and onions; tear the basil by hand.
  2. In a large mixing bowl, combine cherry tomatoes, artichokes, red onion, black olives, torn basil leaves, and mixed greens if using. Toss gently.
  3. In a separate bowl or jar, whisk together olive oil, balsamic vinegar or lemon juice, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
