Ingredients
- 2 cups cherry tomatoes, halved
- 1 can artichoke hearts, drained and chopped
- 1 medium red onion, thinly sliced
- 1 cup black olives, pitted and halved
- 1 cup fresh basil leaves, torn
- 3 cups mixed salad greens (optional)
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar or lemon juice
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- Salt and freshly ground black pepper to taste
Instructions
- Prepare all ingredients: Wash and chop the tomatoes, artichokes, and onions; tear the basil by hand.
- In a large mixing bowl, combine cherry tomatoes, artichokes, red onion, black olives, torn basil leaves, and mixed greens if using. Toss gently.
- In a separate bowl or jar, whisk together olive oil, balsamic vinegar or lemon juice, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
- Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
