- 3 cans cannellini beans (drained and rinsed)
- 1 yellow onion (finely chopped)
- 4 cloves garlic (minced)
- 2 tablespoons olive oil
- 2 large carrots (peeled and chopped)
- 1 stalk celery (diced)
- 1/3 cup white apple vinegar
- 2 cups chopped kale
- Up to 4 cups vegetable or chicken broth
- Seasonings: tomato paste, salt, black pepper, red pepper flakes, Italian seasoning, bay leaves, dried thyme, dried oregano
Instructions
- Sauté onion in olive oil over medium heat until golden. Add garlic, celery, and carrots; cook for another 10 minutes.
- Deglaze with white apple vinegar until most of the liquid evaporates.
- Add cannellini beans and broth (start with 2.5 cups); bring to a boil.
- Cover and simmer on low for about 15 minutes.
- Remove bay leaves; blend part of the soup until smooth and return it to the pot.
- Stir in kale and simmer until wilted; adjust seasoning as necessary.
