  • 3 cans cannellini beans (drained and rinsed)
  • 1 yellow onion (finely chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 2 large carrots (peeled and chopped)
  • 1 stalk celery (diced)
  • 1/3 cup white apple vinegar
  • 2 cups chopped kale
  • Up to 4 cups vegetable or chicken broth
  • Seasonings: tomato paste, salt, black pepper, red pepper flakes, Italian seasoning, bay leaves, dried thyme, dried oregano

Instructions

  1. Sauté onion in olive oil over medium heat until golden. Add garlic, celery, and carrots; cook for another 10 minutes.
  2. Deglaze with white apple vinegar until most of the liquid evaporates.
  3. Add cannellini beans and broth (start with 2.5 cups); bring to a boil.
  4. Cover and simmer on low for about 15 minutes.
  5. Remove bay leaves; blend part of the soup until smooth and return it to the pot.
  6. Stir in kale and simmer until wilted; adjust seasoning as necessary.
  7. Serve warm with gluten-free bread.
