- 1 cup powdered sugar
- 2–3 tablespoons lemon juice or milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix sugar, vegetable oil (or melted butter), eggs, vanilla extract, lemon juice, and lemon zest until smooth.
- Combine wet and dry ingredients gently without overmixing; some lumps are fine.
- Fold in the grated zucchini.
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes until a toothpick comes out clean.
- Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
- Whisk powdered sugar with lemon juice or milk to make the glaze and drizzle over cooled bread.
