  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer, cream cold butter with brown and granulated sugars until creamy. Add cold egg and vanilla; mix well.
  4. Gradually incorporate chopped chocolate, 1 cup of chocolate chips, chopped walnuts (if using), and the dry ingredients until just combined.
  5. Scoop dough into 10 equal balls using a cookie scoop. Top each ball with remaining chocolate chips.
  6. Bake for 12 to 13 minutes until edges are golden brown. Cool on sheets for 5 minutes before transferring to a wire rack.
