  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon lemon juice
  • 1/4 cup unsalted butter, browned

Instructions

  1. Preheat the oven to 325°F (163°C). Grease and prepare a 9-inch springform pan.
  2. For the crust: Combine graham cracker crumbs, sugar, and salt in a bowl. Add melted butter and mix until combined. Press into the bottom of the springform pan and refrigerate.
  3. For the filling: Beat cream cheese until smooth; add sugar and flour. Mix in vanilla bean paste and extract. Gradually add eggs one at a time, then stir in sour cream and lemon juice.
  4. Brown the butter in a saucepan over medium heat until golden brown; let cool slightly before adding to the cheesecake mixture.
  5. Pour filling into the prepared crust and bake for 55–60 minutes until edges are set but center jiggles slightly.
  6. Turn off the oven and let cheesecake cool inside for an hour with the door ajar; then cool at room temperature before refrigerating for at least four hours or overnight.
  7. Serve chilled and enjoy.
