Ingredients
- 60g cocoa powder
- 180g all-purpose flour
- 170g dairy-free dark chocolate
- 110g dairy-free block butter
- 120ml aquafaba (chickpea brine)
- 280g caster sugar
- 100g pistachio nuts (roughly chopped)
- 300g dairy-free white chocolate
- 200g pistachio butter
- 120g plain or vanilla dairy-free yogurt
- 350g silken tofu
Instructions
- Preheat your oven to 180°C (350°F) and prepare your baking pan by greasing it or lining it with parchment paper.
- Melt the dairy-free dark chocolate and butter together until smooth in a mixing bowl. Stir in aquafaba until combined.
- Gradually mix in caster sugar until fully dissolved, then sift in cocoa powder and flour, mixing until just combined. Fold in the chopped pistachios.
- Pour the batter into the prepared baking pan and bake for 25-30 minutes until set yet fudgy. Allow to cool completely.
- For the topping, melt the dairy-free white chocolate with melted butter, then blend silken tofu until creamy. Combine with pistachio butter, yogurt, and sugar until smooth.
- Spread the pistachio topping over cooled brownies, garnish with chopped pistachios, cut into squares, and serve.
