  • 480ml of dairy-free milk
  • 2 teaspoons of apple cider vinegar
  • 420g of self raising flour
  • 350g of caster sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon of bicarbonate of soda
  • 1 & 1/2 tablespoons of ground cinnamon
  • 1 teaspoon of ground cloves
  • 2 teaspoons of ground nutmeg
  • 1/2 teaspoon of ground ginger
  • 120ml of sunflower oil
  • 100g of pumpkin puree
  • 400g of dairy-free block butter
  • 80g of dairy-free cream cheese
  • 360g of icing sugar
  • 1 teaspoon of ground cinnamon
  • Optional: Orange food gel, Cocoa powder, Vegan caramel sauce

Instructions

  1. Preheat your oven to 180°C (350°F). Grease or line a 9×13 inch baking pan.
  2. In a bowl, mix dairy-free milk and apple cider vinegar; let sit for 5 minutes to thicken.
  3. In a large bowl, whisk together self-raising flour, caster sugar, baking powder, baking soda, and spices.
  4. Combine the thickened milk mixture with sunflower oil and pumpkin puree until smooth.
  5. Pour the wet mixture into the dry ingredients and mix gently with an electric mixer until just combined.
  6. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. For frosting, beat dairy-free butter and cream cheese until creamy; gradually add icing sugar and cinnamon.
  9. Frost the cooled cake generously; add optional decorations if desired.
