Ingredients

  • Dairy-free butter
  • Dairy-free milk
  • Caster sugar
  • Active dry yeast
  • Plain flour
  • Fresh or frozen raspberries
  • Strawberry or raspberry jam
  • Chopped fresh strawberries
  • Dairy-free cream cheese
  • Icing sugar

Instructions

  1. Prepare the dough by melting dairy-free butter and combining it with dairy-free milk and caster sugar. Add active dry yeast and let it foam.
  2. Gradually mix in the plain flour until a dough forms. Knead on a floured surface until smooth.
  3. Allow the dough to rise in a greased bowl covered with a damp cloth for about one hour.
  4. For the filling, cook raspberries with caster sugar, water, and cornflour until thickened. Mix in strawberry jam and chopped strawberries.
  5. Roll out the risen dough, spread the filling evenly, roll it up tightly, slice into pieces, and place on a lined baking tray.
  6. Let rolls rest before baking at 180°C (350°F) for 25–30 minutes until golden brown.
  7. Make the glaze by mixing dairy-free cream cheese with icing sugar and vanilla extract, adding dairy-free milk for consistency.
  8. Drizzle glaze over warm rolls and serve with freeze-dried strawberries if desired.
