Ingredients

Scale
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup sugar
  • 1 cup Greek yogurt
  • 3 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup butter
  • 1 cup mixed frozen berries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a loaf tin.
  2. In a mixing bowl, sift together flour, baking powder, and salt.
  3. Toss frozen mixed berries in two tablespoons of flour to prevent them from sinking.
  4. In an electric mixer, beat butter until creamy. Add sugar and mix until light and fluffy. Incorporate eggs one at a time and then mix in vanilla extract.
  5. Gradually add the dry ingredients and Greek yogurt to the butter mixture until just combined.
  6. Gently fold in the floured berries.
  7. Pour batter into the prepared tin and bake for about 50 minutes or until a toothpick comes out clean.
