  • 20 fresh sage leaves
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper to taste
  • 1 ounce grated parmesan cheese
  • Crushed red pepper flakes

Instructions

  1. Preheat oven to 430°F (220°C). Toss diced sweet potatoes and minced garlic in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  2. Boil salted water in a large pot. Cook short pasta according to package directions; drain and reserve about 2/3 cup pasta water.
  3. In a skillet, heat remaining olive oil and butter over medium heat. Fry sage leaves until crispy; set aside.
  4. Add roasted sweet potatoes to the skillet, mashing some while leaving chunks intact.
  5. Stir in cooked pasta, heavy cream, goat cheese, and reserved pasta water until well combined.
  6. Season with salt and pepper before serving topped with crispy sage leaves, parmesan cheese, and crushed red pepper flakes.
