Ingredients

  • 5 cups watermelon, cubed
  • 1/2 cup feta cheese, crumbled
  • 3 cups cucumber, sliced
  • 1/2 cup red onion, sliced
  • Salt and pepper to taste
  • 2 tbsp honey
  • juice of 1/2 lemon
  • 1/4 cup olive oil
  • 2 tbsp fresh parsley, finely chopped

Instructions

  2. Make the dressing: In a small bowl, whisk together honey and lemon juice. Gradually add olive oil while whisking until blended.
  3. Combine ingredients: In a large bowl, mix watermelon, cucumber, red onion, and feta cheese. Pour dressing over the salad and toss gently.
