  • 1 personal-sized seedless watermelon
  • 1 cup diced watermelon
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers (mixed colors)
  • ½ cup diced onion
  • ⅓ cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp finely minced jalapeno pepper (optional)
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

  1. Prepare the watermelon bowl by cutting off the top and scooping out the flesh.
  2. Dice enough watermelon from the scooped flesh to measure one cup.
  3. In a mixing bowl, combine diced watermelon, cucumbers, bell peppers, onion, cilantro, jalapeños, lime juice, salt, and black pepper.
  4. Mix gently until well combined; adjust seasoning to taste.
  5. Scoop the salsa back into the watermelon bowl and serve immediately.
