  • 1 medium cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 1 bell pepper (diced)
  • 1 ripe avocado (cubed)
  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh cilantro (chopped)
  • 1 tbsp honey or agave nectar
  • Salt and pepper to taste

Instructions

  1. Wash and chop the romaine lettuce into bite-sized pieces; place in a large bowl.
  2. Add halved cherry tomatoes, diced cucumber, thinly sliced red onion, and diced bell pepper to the bowl.
  3. Gently fold in the cubed avocado.
  4. In a separate bowl, whisk together lime juice, olive oil, honey or agave nectar, salt, and pepper until smooth.
  5. Drizzle the dressing over the salad and toss gently to combine.
