Ingredients
- 3 lbs chuck roast, cut into 1/2-inch cubes
- 1 lb ground beef (80/20)
- 2 large yellow onions, diced
- 6 cloves garlic, minced
- 3 tablespoons chili powder
- 2 tablespoons ancho chili powder
- 1 tablespoon smoked paprika
- 2 teaspoons ground cumin
- 1 teaspoon cayenne pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon ground coriander
- 2 cups beef broth
- 1 can (28 oz) crushed tomatoes
- 1 can (6 oz) tomato paste
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- 2 bay leaves
- Salt and black pepper to taste
Instructions
- Pat the cubed chuck roast dry and season with salt and pepper.
- In a Dutch oven, heat oil and brown the chuck roast in batches; set aside.
- Brown the ground beef in the same pot; set aside with the chuck roast.
- Sauté diced onions until softened, then add minced garlic.
- Bloom spices in the pot before adding broth and tomatoes.
- Return all meat to the pot, stir well, and simmer for 2-2.5 hours until tender.
