- 2 heads of romaine lettuce, washed and chopped
- 3 celery stalks, chopped
- 1/2 cup red onion, thinly sliced
- 1 cup sharp cheddar cheese, chopped
- 2 gala apples, thinly sliced
- Freshly cracked black pepper
- 1/4 cup extra virgin olive oil
- Juice of 1/2 lemon
- 1 tablespoon Dijon mustard
- 2 tablespoons red apple vinegar
- 1/2 teaspoon oregano
- Salt and black pepper to taste
Instructions
- In a large mixing bowl, combine the romaine lettuce, celery, red onion, cheddar cheese, and gala apples. Season with cracked black pepper and toss well.
- In a mason jar or salad dressing container, mix the olive oil, lemon juice, Dijon mustard, red apple vinegar, oregano, salt, and black pepper. Secure the lid and shake until well combined.
- Drizzle half of the dressing over the salad mixture and toss gently to coat. Adjust with more dressing if desired.
- Serve immediately or store in an airtight container in the refrigerator for up to 3–4 days.
