  • 2 lb chicken breast
  • 1 lb mushrooms
  • 1 onion
  • 4 garlic cloves
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the chicken into bite-sized pieces. Slice the mushrooms, finely chop the onion, and mince the garlic.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken pieces and cook until browned (about 6-8 minutes). Transfer to a baking dish.
  4. In the same skillet, melt another 2 tablespoons of butter and add mushrooms, onion, garlic, salt, and pepper. Cook until softened (8-10 minutes).
  5. Stir in flour; cook for 1 minute before gradually adding chicken broth and cream. Allow to simmer until thickened (3-5 minutes). Stir in thyme and adjust seasoning.
  6. Pour sauce over chicken in the baking dish. Top with cheddar cheese and breadcrumbs. Bake for about 25-30 minutes until bubbly and golden brown.
