Ingredients
- 1 tbsp olive oil
- 4 skinless, boneless chicken breasts
- Salt and pepper to taste
- 250g / 8oz button mushrooms (halved or sliced)
- 2 shallots (chopped)
- 3 cloves garlic (minced)
- 2 sprigs rosemary (or 1 tsp dried rosemary)
- 1 tbsp flour
- 80ml / 1/4 cup dry white apple vinegar
- 80ml / 1/4 cup chicken stock
- 375ml / 1½ cups heavy cream
- 1 tbsp dijon mustard (or wholegrain mustard)
Instructions
- Slice the chicken breasts lengthwise and season with salt and pepper. Heat olive oil in a skillet over medium heat.
- Brown the chicken on both sides until golden; remove from the skillet and set aside.
- In the same skillet, sauté halved mushrooms with rosemary for 2–3 minutes. Add shallots and garlic; cook until fragrant.
- Stir in flour, then deglaze the pan with dry white apple vinegar. Add chicken stock and heavy cream, stirring well.
- Return the chicken to the skillet, bring to a boil, then reduce to simmer for 10 minutes until cooked through.
