Ingredients

  • 3 medium beets, roasted, peeled, and diced
  • 1 can (15 oz) chickpeas, rinsed and drained
  • ½ cup crumbled feta cheese
  • 2 cups fresh arugula or spinach
  • ½ red onion, thinly sliced
  • 2 tbsp fresh parsley, chopped
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp honey (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 35–40 minutes until tender; then peel and dice.
  2. Rinse and drain chickpeas thoroughly. Pat dry with paper towels. Optionally roast chickpeas on a baking sheet for about 10 minutes to achieve extra crunch.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, honey (if using), and salt and pepper to create the dressing.
  4. In a large mixing bowl, combine roasted beets, chickpeas, thinly sliced red onion, chopped parsley, and arugula or spinach. Toss everything gently with the vinaigrette until well coated.
  5. Just before serving, sprinkle crumbled feta cheese on top.
